The topic of money (rather than time) spent at stations is a fascinating one - and one the spend at retail outlets is a significant income to - well - whom? The subject has been one that has come up in West Wiltshire recently, with concerns at the effect of strikes and engineering works suppressing income for catering outlets which pay rental for premises and, I believe, a proportion of their income to the station managers who in our local cases are First Group (GWR). I raised the concerns during "Meet the Manager" but my questioning in public about how this works was shut down as being "Commercial in Confidence". I don't feel that stops us discussing the principles, nor in liaising with individual outlets should they wish us to do so.
